As you all know, you can blanche vegetables and freeze them in zip-lock bags for meal size portions. Is it possible to do this with diced potatoes? I'd like to do it so I can have some homefries ready when needed! Anyone? Thanks!

Yes but cook them very briefly, potaoes tend to soften after they are frozen.
